DOUGHNUT CUPCAKES





I really love doughnuts. I've always wanted to have a go at making my own but I never have done because I know it can get very messy/smelly/splatty as they need deep-frying in oil. Then I found this recipe for cupcakes that taste like mini jam doughnuts. Score. 

You will need...
  • 200g/8oz of butter, softened at room temperature (plus a tiny bit for melting)
  • 200g/8oz of golden caster sugar
  • 2 large eggs and the yolk of a 3rd
  • 300g/10oz of self-raising flour
  • 100ml/3.5fl oz of milk
  • 1/2 tsp of baking powder
  • 12 tsp of strawberry jam
  • Icing sugar

Method
  • Preheat the oven to 180 degrees celsius and line a 12 hole baking tray cake cases
  • Beat the butter, sugar, eggs, flour, milk and baking powder in a large bowl - very, very easy
  • Fill a case with one spoonful of mixture then use the back of the spoon to make a dip in the mixture
  • Fill the dip with a spoonful of jam and cover with a couple more spoonfuls of cake mixture
  • Bake for 25 and then cool
  • Melt a little lump of butter in a pan, brush it over the cakes and sprinkle icing sugar on top

And that's it! They're very easy and slightly delicious, especially when they're still warm.
